This unfortified, "sherry-style" wine is made from a rare local grape called Eva de los Santos. The wine is aged "Bajo Velo" (under flor) in older oak casks for 277 days before being finished in cement tanks. Tastes like a softer nod towards a Manzanilla, with great acidity and a kiss of salinity on the finish.
